- 2 pitta breads
- 6-9 slices of halloumi
- 1 tbsp squeezy honey
- 1 large tomato, sliced thinly
- 2 tbsp olive oil
- salt to taste
- pinch of chilli flakes, optional
- pinch of dried parsley, optional
- 1 clove garlic, optional

1. Marinate the Tomatoes
Place the sliced tomatoes on a large plate, drizzle over 1 tablespoon of olive oil, sprinkle with salt, and add dried parsley if using. Set aside to marinate.
2. Grill the Halloumi
Heat the remaining tablespoon of olive oil in a small frying pan over medium heat.
Add the sliced halloumi and squeeze the honey over the top. Cook for 2–3 minutes on each side, or until golden brown.
If you like some heat, sprinkle with chilli flakes during cooking. Remove from the pan and set aside.
3. Prepare the Pitta
Cut each pitta bread in half and hollow out the centre. Toast them for a few minutes until lightly crunchy.
For extra flavour, rub the cut side of a garlic clove over the toasted pitta for a garlicky aroma.
4. Assemble the Pitta
Stuff the toasted pitta halves with the marinated tomatoes and honey-grilled halloumi.
Serve immediately and enjoy while hot!
