This dish packs a deep umami punch, thanks to the nutty creaminess of Fontina cheese and the fermented depth of moromi - an unrefined soy mash that’s bold, salty, and full of character. It’s rich, complex, and beautifully plated.
- Fontina is a semi-soft, cow’s milk cheese from Italy with a mild nuttiness and great meltability - think Gruyère’s funkier cousin.
- Moromi is the chunky, fermented mash of soybeans, salt, and grains that forms the base for making soy sauce. Used as a seasoning or condiment, it brings intense savoury-salty complexity.
Another early highlight is the Hokkaido milk bread with kumquat.

The kombu-cured bream with smoked red butter and pear is also a standout.
Buttery and slightly sweet, it offers a subtle contrast that complements richer dishes on the table.

We also got the tuna crudo, dressed simply with house-made ponzu and fresh wasabi.
It’s clean, balanced, and quietly excellent. (If you’re not familiar, ponzu is a citrus-based soy sauce - tangy, savoury, and the perfect match for raw fish.)
