  • 2 boneless, skinless chicken breasts
  • 2 tbsp cornflour (for extra crispiness)
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 1 medium onion, finely chopped
  • 4 garlic cloves, minced
  • 150g sun-dried tomatoes, chopped
  • 1 tsp Italian seasoning
  • 1 cup chicken stock
  • 1/2 cup heavy cream
  • Fresh basil (for garnish)
  • Parmesan cheese (optional, but highly recommended)

1. Prep the Chicken

Season your chicken breasts with salt and pepper. Coat them evenly with cornflour for that crispy, golden crust.

2. Cook the Chicken

Heat olive oil in a pan over medium heat. Add the chicken breasts and cook for 4-5 minutes on each side until golden and crispy. Remove from the pan and set aside.

3. Sauté the Aromatics

In the same pan, sauté the chopped onion for about 3 minutes until softened. Add the minced garlic and cook for another minute.

4. Add Sun-Dried Tomatoes and Seasoning

Stir in the sun-dried tomatoes and Italian seasoning. Let them cook for another minute to develop flavour.

5. Make the Sauce

Pour in the chicken stock, bringing it to a simmer. Once it reduces slightly, add the heavy cream. Let the sauce thicken.

6. Finish the Chicken

Return the crispy chicken breasts to the pan, spooning the sauce over them. Let it simmer for 5 minutes to ensure the chicken is fully cooked and coated in that delicious sauce.
